Healthy Recipe of the Day: Guac-n-Pepper

This is such a simple dish for those of you who are on the go and want something quick, yummy and balanced. Remember, the guac contains avocado which is an amazing healthy fat that offers your body wonderful benefits. Avocados are great for your hair, skin, they act as cholesterol lowering agents, they help decrease blood sugars, decrease inflammation and might even help with building cellular walls all throughout the body. It’s a superfood.

Peppers offer you phytochemicals which have antioxidant properties. Remember, you always want to include foods in your diet that fight oxidative stress to the body. Sometimes simply your environment causes that, so you want to decrease the damage from that oxidative stress by eating antioxidant containing foods.

So, here is what you need:

3-6 Organic red bell peppers

3-6 organic Haas avocados

2 limes

1/2 teaspoon kosher salt

1/2 teaspoon ground cumin

1/2 teaspoon cayenne

1/2 -1 whole medium red onion diced

2 Heirloom tomatoes, seeded and diced

1 tablespoon chopped cilantro

1 clove garlic, minced

What to do:

After dicing, chopping and peeling the layers off the avocados and other stuff, toss it all into one big bowl and mix together. Nothing fancy. Just mix it all in and then put the bowl into the fridge for one hour to get chilled. In the meanwhile, scoop the center of the peppers out and remove all seeds. Then stuff the guacomole into the center of each pepper. Distribute evenly through all the peppers. A nice touch would be to save the lid to each pepper and close it up so that you can hand these mini creations out to people at work, or your family and not spill any of the guac out of the pepper.

Consider this one of your meals for the day. It will provide you with both a healthy fat source and a carbohydrate. While avocados have 4 grams of protein per serving, they are classified as a healthy fat, so be sure to get your protein in at the next meal!
