Recipe of the Day: White Chocolate Chip and Blueberry Almond Flour Cookies

You are probably wondering how a fitness expert can present cookies on her site. How? Because many of you love sweets and/or bake for parties, etc. and I must therefore provide you with viable options that will allow you to be successful in your journey of optimal living. Fair enough?

Not to mention, I stumbled upon this recipe and guess what? I had to share. Oh my, you will see why!

Interestingly enough, I went to a BBQ on Saturday night and there was a cookie contest between my cookies and standard white flour cookies (white flour is processed and is horrible for you!). All the healthy individuals loooooooooved my cookies and those who refused to consider health and wellness as part of their vocab (this only included 2 folks) stated, “Nothing beats a real cookie!” I beg to differ!

And so, I am posting my cookie recipe because I love you and I know you love your body. Be cautious not to eat too many of these because the almond flour has fat in it. Too much of any macronutrient will hinder optimization (and weight loss for some of you!).

So here it is. Get ready to taste the most amazing experience in your mouth.

What to get:

Almond flour (1 whole package assuming you are getting a 1 lb bag)

Egg whites (1/2 cup approximately)

2 Tbsp coconut oil

Vanilla

Sea Salt (just a dash)

Baking powder (tbsp)

Ghiradelli white chocolate chips (1/2 cup)

Blueberries (1/2 container)

What to do with all of this:

Just throw it all into a deep bowl. I start with the almond flour, add the egg whites, coconut oil (you might need to melt it), and all the other stuff comes after.

Put the blueberries and chocolate chips in last. Make sure the batter isn’t too watery. If it is too watery, then simply add a little more almond flour from another almond flour bag (always own 2).

After all ingredients are in the bowl, get a pan and shape each individual cookie in the pan. Smaller cookies are better. Big cookies give you less in the batch. Smaller cookies also help with portion control. These things are so dang good so please eat only 1-2 per serving. Although the ingredients are very healthy, portion control will help you keep that belly flat and your energy high. Enjoy! You will love me for this one! (wink!)
